EXPO 2015 SPECIAL - THE DISCOVERY OF THE WHITE CIMADOLMO ASPARAGUS IGT An entirely evening dedicated to one of the most famous and loved typical spring products of Treviso. An occasion to appreciate the gastronomic value and the delicate fragrance of this ancient spear. Fresh, genuine, with a delicate flavor. But mostly white. The asparagus has very ancient origins as to be quoted by Cato in his "De agricultura" and be called "prodigia ventris" by Plinio il Vecchio. The white ones from Cimadolmo, in particular, are grown in the countries crossed from the riverbed Piave since the High Middle Ages and are highly prized for their sweetness and intrinsic organoleptic properties. The humid-temperate climate, the fertile sandy-loam soil, abundance of water and the passion of men, allowed white asparagus of Cimadolmo in 2011 to obtain the certification of Protected Geographical Indication.

To this delicate and precious bud, that will delight even the most discerning palate and embellishes the tables in Spring, is dedicated this evening organized by the restaurant Le Calandrine. The walls of our historical local in the province of Treviso, then, will be the setting for an unforgettable dining experience. The menu that the chef Luigi Barbiero thought for the occasion will, in fact, make the most of this spring bud and its intrinsic characteristics: rich in fiber, calcium, phosphorus, magnesium, potassium and vitamins, white asparagus is also absolutely low in fat, protein and sugars.

LOCAL HISTORY OF ITALY

Once upon a time there was a tavern ... Born from the renovation of an old farmhouse used as a stable, in the landscape of river Piave, the tavern has been enlarged and evolved step by step by the will and commitment of the three partners - Gianni, Remo and Iliana - who believe in the beauty of the environment and the flavors of the territory. The hallmark of the Park Restaurant Le Calandrine's tavern its is own coat of arms, inherited from the Papadopoli family, counts originally from Corfu that lived in Venice, which inspired the name of the restaurant. The Calandra is in fact the bird representative of the Grave of Papadopoli (an area near river Piave), where it has found its ideal habitat.
