Flour is obtained from cereals' caryopsis or other farinaceous products. Besides the flours obtained from legumes, nuts or tubers, there are corn, barley, emmer, rice, oat, rye, kamut and other types of flour.

Commonly, the term flour indicates the one made of wheat, particularly the soft type, while the word bran indicates the durum wheat flour. In consideration of their role in bread and pasta making, these types are widespread over the world, and protected by the laws of different countries.
